Hey Arielle! I'm recently vegan, and I'm really struggling with my fat intake. I am a person that thrives on a relatively high amount of fat (especially nut and nut butters, olive oil, avocados, etc) but how much is too much? For example, today I had a sprinkle of pine nuts in my salad and about 4 small bananas, all with a teaspoon of heaping peanut butter. It definitely is more than I would like, but I don't know how else to get all my calories for the day! Thank you :)
Different people require different amounts of fat! I, personally, don’t feel well if I have too many nuts, avocado, or coconut. It really all depends on how you feel after eating.
If you’re worried about consuming enough calories, turn to beans and hearty whole grains like brown rice, quinoa, millet, and buckwheat!
